Spiced Cauliflower Steaks with a Herb Sauce

For about 15 people, depending on cauliflower size
(Small wooden boats, tasting portions)

  •  ½ cauliflower head
  • 1 heaped tsp of ground cumin
  • 1 heaped tsp of ground coriander
  • 1 bunch of fresh miexed herbs (such as parsey, coriander…)
  • 1 lemon
  • olive oil, salt and pepper

Method

Cut the cauliflower into 2 cm thick steaks.

Mix salt, ground coriander an cumin and coat the steaks with this mixture. Fry the steaks at 200 degrees Celsius on the teapan until golden-brown. Season with pepper.

Use a blender for the dressing: blend the herbs with salt, pepper, 4 tbsp of olive oil and lemon juice. Drizzle the dressing over the warm steaks and serve with some lemon zest, if you like.
