Spelt Pancakes with Berries and Honey

For about 30 people (small wooden boats, tasting portions)

  • 120 g spelt flour
  • 2 large eggs
  • 120 ml milk (or spelt or oatmilk)
  • 1 heaped tsp baking powder
  • 250 g fresh berries
  • 150 g Quark (curd cheese)
  • 5 tbsp honey
  • cooking oil (or clarified butter/ghee), salt


Mix the ingredients for the pancakes – eggs, flour, milk, baking powder, 2 tbsp of honey, pinch of salt – and fry them with some oil in a pan on a medium heat, or on the tepan using 180 degrees Celsius, until golden-brown. Squash half oft he berries using a fork and mix with the quark and 3tbsp of honey. Serve the pancakes with some quark-topping and fresh berries. Garnish with more honey, if you like.
